Recreational kayaks were designed for precisely that use – recreational. These are designed for fishing, bird watching, relaxing on the water, and basically spending a leisurely day in your kayak. They're stable, but not designed to be taken on choppy water, and not really meant for long trips. Sea kayaks are somewhat similar to recreational kayaks, except that they're going to be workable on choppier waters, are going to remain a bit more stable, and are going to be a bit less “relaxed” in the seating arrangements. Touring kayaks are a longer boat designed for big trips. You're going to be able to get more distance off these boats without as much effort, so long as you're using the correct paddle with them. Creek kayaks are meant for rivers that have bigger drops, and are specifically designed to handle these drops well. Great for whitewater kayaking in specific waters, creek kayaks are a great fit for many. River runners are the fastest of the kayaks for whitewater kayaking as well as sprints. They're great for rivers where you want to pick up a lot of speed but don't have excessively rough conditions. Play boats are also good for whitewater kayaking, as they allow for the most maneuverability on the water. The important thing is to know the kayaks and know what sort of area you're planning on using it in. If you're still a little lost, call people at local sports and recreation goods stores in the area you're wanting to visit, and ask for their recommendation. If that fails, the web is also a great resource.
